This is a bit out of season. But, oh well.
It's good. And very simple.
It was inspired by this post. I made a few minor tweaks to appease the meat eaters in this family.
Beyond that, the sparse ingredients shine on their own.
Pasta & Roasted Tomatoes
Italian turkey sausage (optional)
whole wheat pasta
cherry tomatoes
olive oil
fresh basil
goat's milk feta
salt and pepper
Cut tomatoes in half. Toss with olive oil, salt, and pepper. Roast in a 400* oven until they burst and begin to reduce in size.
Cook sausage and set aside.
Cook pasta.
Chop basil.
To serve, add pasta to a bowl. Top with sausage and roasted tomatoes. Sprinkle basil and feta on top.
If you have the time, you can slow roast your tomatoes for a more intense flavor. The process is the same, but you will roast low and slow at an oven temp of 225*.
Either way, they taste amazing.
You can have this on the table in a flash.
