Here they are: the brownies I mentioned in this week's menu. You will eat these and think, "You have got to be kidding me...there is no way these are healthy."
The ingredients are simple:
Some applesauce, sugar, and vanilla.
Whole wheat flour.
Really. No joke.
Cocoa powder, of course.
A bit of baking soda,
baking powder, and salt.
My sous-chef did the mixing.
Spread the batter evenly.
Sous-chef is serious about his work.
He doubles as quality control.
While the treats bake,
choose a pretty platter.
This one will do.
When cool, cut and stack neatly.
It's OK. You can eat one now.
Or two.

"You've Got To Be Kidding Me" Brownies
1 cup apple sauce
1/2 cup sugar
1 tsp. vanilla
3/4 cup whole wheat flour
1/3 cup cocoa powder
1/2 tsp baking soda
2 tsp baking powder

Preheat oven to 350*
Mix applesauce, sugar, and vanilla.
Add flour, cocoa, baking soda, baking powder, and salt.
Mix until all ingredients are incorporated.
Pour batter into a greased 8x8 baking dish.
Bake 25-35 minutes, or until a toothpick can be inserted cleanly in the middle.
