Seeing as how I never got around to posting a menu last week, and since this week is practically finished, I think I will focus on our favorite meal.
TACOS.
I don't think we've ever declared it to be our favorite. But I usually make it once a week.
And no one complains.
That says "favorite" to me.
I always start with a can of refried black beans. This is key.
It's like the glue that holds everything together. Because who wants a taco blow-out?
The fillings vary.
Our current favorite is a zucchini-squash mixture. I chop it small and add it to a hot skillet with some onion and cook until soft.
Other common fillers: sautéed peppers, shredded cabbage, avocados, salad greens, corn, tofu, and tomatoes.
I think you can put just about anything in a corn tortilla, add some salsa, and call it dinner.
And don't forget the sour cream.
Some words on sour cream: There are good dairy free versions out there. I like the Follow Your Heart brand. But you know...it's just not the same.
This is one of those areas where I break the rules. I use sour cream made from milk that comes from a cow. It just tastes better.
I've accepted the fact that I'm not willing to compromise on sour cream.
Salsa, however, lends itself to experimentation.
Go on. Get crazy.
Tacos.
They bring people together.
