What's for dinner this week? It won't be bread, pasta, or potatoes. Or sugary goodness. Nope. Spring hit Houston this weekend. There might be a cool day here or there, but you can feel the shift. It's spring.
And that means summer is just around the corner. And *that* means swimsuits are on the horizon. And **that** means it's time to put the whole eating better + exercise thing into overdrive. Cutting out most starches and sugars is my kick-start.
Don't let this scare you. This week we will feast upon:
Sunday: grilled chicken with mushrooms, black eyed peas, broccoli, tomatoes
Monday: black beans, chicken or venison sausage, zucchini, tomatoes
Tuesday: stuffed peppers, squash
Wednesday: New Year's Soup (minus the wild rice, double the lentils)
Thursday: left-overs
Friday: grilled hamburger patties, kale chips
Saturday: spaghetti (served on spaghetti squash), salad
Obviously, I won't be baking. Those sweets I've been wanting to try will be put on hold for a while. *sigh*
I'm going to fix a big skillet of scrambled egg whites with spinach, tomatoes, and mushrooms for breakfast. It should last me through the week. Add a bit of turkey sausage and I'm good to go.
Snacks will be the vegetable sort: red and green peppers, hummus, snow peas. I found a really good company that makes all natural tzatziki and salsa. So that can be added to the mix as well.
All of these meals can be made more "family friendly" by adding a side of pasta or potatoes. That's usually what I do when I'm in the midst of a kick-start. This time, however, The Mr. is joining me.
We'll see how long he lasts.
