What's For Dinner?

Well, heeeelllloooo there!

I'm so glad to be rejoining the fun here in Blog Land. That devilish respiratory infection has loosened its grip. I'm almost back to normal, which is so very nice. You don't fully appreciate your health until it leaves you. Mine left, and I am most thankful for its reappearance.

We are also adjusting to the new school schedule. It isn't seamless, but not nearly as torturous as it was a couple weeks ago. I'm feeling the dust settle around us. We have a routine. Living for Fridays is the new norm.

I looked to this weekend as a "reset". Time to shake off the stress of a new school year and my sub-par physical well being. And that's just what happened.

All my wishes were granted: I slept...a lot. I had a margarita and some Mexican food. And the Longhorns won their first game of the season. Really, what more could I ask for?

Since things are getting back to normal, I feel it only fitting that the trend continue here in Blog Land. So, without further ado...

This week's menu:

Monday: grilled BBQ chicken, grilled vegetable salad with feta, tomatoes

Tuesday: grilled flank steak, black beans, sautéed peppers and onions, guacamole

Wednesday: Greek pasta, salad with garlic vinaigrette

Thursday: leftovers

Friday: hamburgers, oven fries

Saturday: Mediterranean pizza, tomato salad

We are settling into a rhythm, but I'm not so bold as to add baking to the scenario. At least not mid-week. I might make more of those oat muffins. I haven't been able to eat lunch once since school began, and they are perfect to shove down my throat while rushing to pick up my little ones from music or PE.

My brain is getting geared for fall eating: soups, chowders, stews. However, it's still in the 90's almost every day. Doesn't really mesh with autumnal menus, huh?
