What's For Dinner?

This week dinner will include...

Sunday: grilled chicken and flank steak for fajitas, sautéed peppers & onions, pico de gallo, guacamole, black beans

Monday: spaghetti, spinach, spaghetti squash, whole wheat baguette

Tuesday: sausage, brown beans, tomatoes

Wednesday: cabbage casserole, brown rice, green beans

Thursday: leftovers

Friday: hamburgers, oven fries

Saturday: out

Leftover birthday cake abounds and should satisfy all sweet-tooth needs. That takes me off the baking hook for the week.

Tuesday's menu reminds me of home. Mema always has a big pot of brown beans cooked and ready to eat at her house. Often she serves it with Polish sausage. And, of course, fresh tomatoes. When I visit in the summer I pretty much live on brown beans or black eyed peas, fresh tomatoes, and cucumbers.

Wednesday's cabbage casserole is my own creation. We are big cabbage eaters, but it can get a bit dull. This is a one-dish meal that's super simple. It includes some ground beef (I use buffalo), cabbage, shredded carrots, mushrooms, some condensed low sodium soup, and a bit of cheddar cheese. It's not glamorous, but it's mighty tasty. If anyone is interested in a more detailed recipe, let me know and I'll post one.

Gramma is taking The Boy for a belated birthday weekend. Therefore we will head out for dinner on Saturday. I'm figuring it will be a calmer dining experience than we are accustomed to experiencing.
