Crockpot Magic

Last night dinner was waiting for me when I got home. As I opened the door I was greeted with the most comforting aroma. Instantly I was put in a better mood.

Crockpot magic was saving me an evening in the kitchen.

I made Chicken Posole. This is so easy. So good. So perfect.

The only thing that makes it better is a side of cornbread. I don't make my cornbread from scratch. I was raised on Jiffy cornbread mix. At 33 cents a box, it's a steal. But it has hydrogenated oil. So...

I use this. Sorry, Jiffy. This kicks your butt. It's more like corn-cake than cornbread. I substitute plain yogurt for the milk and it gives it such a light and fluffy texture.

I've been known to have an extra piece for dessert. It's that good.

Add a little grated cheese and some sour cream and you have got quite the tasty meal.

Here is the recipe for those of you who want some crockpot magic of your own:

Crockpot Chicken Posole

1 large can yellow hominy, drained
1 large can Rotel tomatoes
1 can black beans
2 cans green enchilada sauce
1/2 package shredded carrots
1 chopped onion
3 cloves minced garlic
3 t. cumin
1 package chicken thighs, trimmed of fat

Combine all ingredients in the crockpot. Stir well. Cover and cook 3-4 hours on high or 1 complete work day on low.

Skim off any fat. Shred the chicken.

Enjoy.
