What's For Dinner?

We are going to enjoy quick and easy menu items this week.

Sunday: grilled chicken with garlic, large mixed salad with feta, couscous, whole wheat bread

Monday: The Mexican Skillet Dish, brown rice, zucchini

Tuesday: homemade pizza with Italian turkey sausage, artichokes, and kalamata olives on a whole wheat crust

Wednesday: tomato soup, grilled cheese sandwiches

Thursday-Sunday: out of town

As you can see, this week is a short menu. We will be going to Austin and San Antonio for Easter weekend.

On Friday morning I will be having brunch at Magnolia on Congress in Austin. I always get the tropical tacos and one whole wheat pancake with blueberries for dessert.

Friday night I will be cheering for my Spurs as they play against the Utah Jazz while having a cold beer and some form of stadium food.

The rest of the weekend I can count on a big breakfast and Tex-Mex for dinner. My mouth is already watering.

The Mexican Skillet Dish is a Dani original. It is basically a mix of ground meat, onions, black beans, kidney beans, diced tomatoes, taco seasoning, and a little frozen corn. I top it with some grated cheese and sour cream. It is so easy and tasty. Comfort food, Texas style.
